Entre as antiguidades greco-romanas existem evid\u00eancias da produ\u00e7\u00e3o de vinho. O que seria encontrado em ru\u00ednas no alto dos Alpes su\u00ed\u00e7os? Exatamente, queijo. Ou melhor, resqu\u00edcios da fabrica\u00e7\u00e3o de queijo.<!--more--><\/p>\n<p align=\"justify\">O queijo existe h\u00e1 mil\u00eanios e come\u00e7ou a ser fabricado como forma de preservar o leite \u2014 de vaca, de ovelha ou de cabra \u2014 a longo prazo. Basicamente, o processo de fabrica\u00e7\u00e3o do queijo consiste na acidifica\u00e7\u00e3o e fermenta\u00e7\u00e3o da coalhada, que em seguida \u00e9 posta em formas e desidratada (geralmente por meio de prensagem, mas \u00e0s vezes por um lento aquecimento).<\/p>\n<p align=\"justify\">Acrescentado antes ou depois da prensagem, o sal atua como elemento conservante. N\u00e3o raro, havia esporos de fungos presentes nos locais de fabrica\u00e7\u00e3o. Com o tempo, ap\u00f3s observar que a contamina\u00e7\u00e3o f\u00fangica trazia efeitos ben\u00e9ficos em certos tipos de queijos, alguns queijeiros passaram a acrescentar intencionalmente os fungos. Por fim, os queijos eram armazenados, sendo envelhecidos ou maturados.<\/p>\n<p align=\"justify\">Por\u00e9m, por mais que existam alguns queijos bem envelhecidos, eles n\u00e3o resistem \u00e0 passagem dos s\u00e9culos. O que sabemos sobre os queijos da antiguidade vem da an\u00e1lise de potes, formas e outros utens\u00edlios que foram usados na produ\u00e7\u00e3o deste derivado do leite. Recentemente, cientistas das universidades de York e Newcastle (Inglaterra) encontraram fragmentos de cer\u00e2mica usados por su\u00ed\u00e7os dos tempos neol\u00edticos \u00e0 Idade do Ferro.<\/p>\n<p align=\"justify\">Esses fragmentos foram encontrados em ru\u00ednas de casas de pedra n\u00e3o muito diferentes das usadas at\u00e9 hoje pelos queijeiros dos Alpes su\u00ed\u00e7os. A an\u00e1lise dos resqu\u00edcios encontrados nas cer\u00e2micas datadas do primeiro mil\u00eanio antes de Cristo revelou assinaturas qu\u00edmicas consistentes com o processo de aquecimento do leite, uma das etapas da fabrica\u00e7\u00e3o do queijo.<\/p>\n<p align=\"justify\">Embora os vales su\u00ed\u00e7os tenham ind\u00edcios mais antigos da exist\u00eancia de queijo, essa descoberta \u00e9 importante por ser a primeira evid\u00eancia de atividade queijeira nas montanhas, onde os s\u00edtios arqueol\u00f3gicos s\u00e3o bem menos preservados.<\/p>\n<p align=\"justify\">Segundo a pesquisa publicada em 21 de abril na <em>PLoS ONE<\/em>, \u00e0 medida que a popula\u00e7\u00e3o dos vales crescia, exigindo a ocupa\u00e7\u00e3o de mais terras baixas ar\u00e1veis, a fabrica\u00e7\u00e3o de queijo subiu para as encontas montanhosas. \u201cMesmo hoje em dia a produ\u00e7\u00e3o de queijo em ambiente montanhoso requer esfor\u00e7os extraordin\u00e1rios\u201d, disse ao <em><a href=\"http:\/\/www.scinews.com\/archaeology\/cheesemakingswissalps03804.html\">Sci-News<\/a><\/em> o autor principal do estudo, Dr. Francesco Carrer, da Universidade de Newcastle.<\/p>\n<p align=\"justify\">Para Carrer, a descoberta revela que os pastores pr\u00e9-hist\u00f3ricos tinham um \u201cdetalhado conhecimento da localiza\u00e7\u00e3o das pastagens alpinas, eram capazes de lidar com um clima imprevis\u00edvel e tinham o conhecimento tecnol\u00f3gico para transformar o leite em um produto nutritivo e armazen\u00e1vel\u201d como o queijo.<\/p>\n<p align=\"justify\">No entanto, ainda n\u00e3o est\u00e1 claro como eram os queijos su\u00ed\u00e7os pr\u00e9-hist\u00f3ricos. N\u00e3o se sabe ao certo qual era o processo de fabrica\u00e7\u00e3o, o tempo de matura\u00e7\u00e3o nem qual tipo de leite era a mat\u00e9ria-prima ou se era uma mistura de v\u00e1rios tipos de leite.
